Regan's Red Cabbage Edamame Salad


serves 6-8

ingredients:

1 head of red cabbage
1 bag of frozen thawed or fresh edamame beans
2tbs of olive oil
2 tbs chopped thyme
1/3 cup coursly chopped walnuts or pine nuts
1/2 cup balsamic vinegar
2 tablespoons of olive oil
dash of salt and pepper
1 tsp of agave

directions:

hand chop or run the head of red cabbage through the thin blade of food processor.   Place in large bowl.

make dressing with vinegar, oil, agave, and thyme

toss edamame beans, dressing, finish with salt and pepper.

top with nuts.
