New Potatoes in Saffron Dressing


serves 4

ingredients:

1 pound new potatoes
1/3 cup light olive oil
3 tablespoons of sherry
a few strands of good quality saffron
1 garlic clove
1/2 red chili, finely chopped
1/2 tablespoon of paprika
1 tablespoon of Dijon mustard
3 tablespoons white wine vinegar
salt and fresh ground pepper to taste



directions:

cook the potatoes in salted boiling water for about 15 minutes, depending on size and peel.

warm the oil and sherry in a pan and place the strands of saffron in the mixture to infuse for a few minutes.

combine the remaining ingredients in a food processor, adding the oil mixture slowly in a thin drizzle until it makes a fairly thick emulsion.

pour over potatoes and season with salt and pepper.  Add fresh herbs if you have them.
